Hello Reader, I love discovering new Thai recipes, and this one is a revelation. I'm a huge fan of eggs (all ways) so this Thai crispy fried egg salad (yam kai dao) just blew me away. It's not a dish you'll see on restaurant menus, but it really is a star recipe!

Crisp fried eggs are chopped and combined with fresh and healthy aromatics, then tossed in the perfect Thai dressing — a harmonious mix of sweet, sour, spice, and salt. It's the perfect light lunch, or a side that pairs well with anything Thai.

You'll find the ingredients easily, and it's a dish you can whip together in no time. It has fast become a family favourite Asian recipe that I've cooked so many times over the Aussie summer.
